Chorizo Quesadilla Ole!
2 links chorizo sausage  
250 mL (1 cup) corn
4 eggs
125 mL (1/2 cup)
shredded old cheddar cheese
4 large (22 cm/9 inch) cheese tortillas
1 avocado (sliced into 24 slices)
125 mL (1/2 cup) salsa
 

Remove sausage from casing. In a small skillet, saute sausage until browned. Add corn and continue cooking just until warmed. In a small bowl, beat eggs together and stir into sausage mixture. Scramble until soft curds form.

Place one tortilla in quesadilla maker (or large frying pan on medium-high heat). Evenly spread half of the egg mixture out from the centre of the tortilla. Leave room for the tortilla to seal at edges. Sprinkle half of the cheese on top. Cover with second tortilla and close quesadilla maker lid. Cook for 3 to 4 minutes until golden brown. If using a frying pan, cover for 2 to 3 minutes or until quesadilla is set, then flip over and cook for another 1 to 2 minutes.

Remove from quesadilla make. Cut into six pieces and garnish each piece with two slices of avocado and a small spoonful of salsa. Repeat with remaining ingredients.

Let cool slightly and serve.
