Cinnamon Oatmeal Breakfast Pudding
500 mL (2 cups) water
1 mL (1/4 tsp) salt
4 eggs
50 mL (1/4 cup) 2% milk
2 mL(1/2 tsp) cinnamon
2mL (1/2 tsp) vanilla
300 mL (1¼ cup ) quick cooking oats (not instant"
325 mL (1 1/3 cups) 2% milk
50 mL (1/4 cup) dried cranberries
20 mL (4 tsp) granulated sugar
   
Cinnamon Oatmeal Breakfast Pudding

Bring water and salt to boil in medium saucepan over high heat. Whisk together eggs, 50 mL (1/4 cup) milk, cinnamon and vanilla in medium bowl; stir into boiling water. Reduce heat to medium-low. Stir in oats. Simmer until desired consistency, about 5 to 6 minutes, stirring occasionally. Spoon into bowls; top each serving with milk, cranberries and sugar.

Makes: 4 servings.
