Good Morning Casserole
4 bread slices, crusts removed, cut into quarters
6 eggs
375 mL (1 ½ cups) milk
4 slices turkey bacon, diced and cooked
125 mL (1/2 cup) Cheddar cheese, shredded, fat-reduced, divided
75 mL (1/3 cup) mushrooms, sliced
1 mL (1/2 tsp) salt
125 mL (1/2 cup) hash brown potatoes, frozen
   

Preheat oven to 180°C (350°F). Spray a 23 x 23 x 5 cm (9 x 9 x 2 inch) baking pan with cooking spray. Arrange bread slices in pan overlapping slightly and set aside.

Beat together eggs, milk, bacon and 50 ml (1/4 cup) cheese in large bowl. Add mushrooms and salt. Pour mixture over bread slices. Sprinkle potatoes and remaining cheese over egg mixture. Bake until lightly browned and knife inserted near centre comes out clean, about 35 minutes. Serve immediately.
