Honey Dijon Eggs
Vegetable Spray
2 eggs
30 mL (2 tbsp) low fat Honey Dijon Dressing
15 mL (1 tbsp) finely chopped onion
To taste freshly ground pepper
Lightly spray a shallow 500 mL (2-cup) microwave-safe dish with vegetable spray. In the same dish, beat together eggs, dressing, onion and pepper. Cover with plastic wrap, turning one corner back to create a small steam vent. Microwave on MEDIUM (50%) for 3-1/2 to 4 minutes, stirring halfway and at the end of cooking. Let stand for 1 minute.
Makes 1 serving.
