Dijon Eggs

| 30 mL (2 tbsp) | low fat Honey Dijon Dressing | ||||||
| 15 mL (1 tbsp) | finely chopped onion | ||||||
| To taste | freshly ground pepper | ||||||
| Lightly spray a shallow 500 mL (2-cup) microwave-safe dish with vegetable spray. In the same dish, beat together eggs, dressing, onion and pepper. Cover with plastic wrap, turning one corner back to create a small steam vent. Microwave on MEDIUM (50%) for 3-1/2 to 4 minutes, stirring halfway and at the end of cooking. Let stand for 1 minute. | |||||||
