Nests
with Ham, Eggs and Swiss Cheese

| 75 mL (1/3 cup) | butter, melted | |||
| 150 mL (2/3 cup) | ham, finely chopped | |||
| 170 g (6 oz) | swiss cheese, grated | |||
| 50 mL (1/4 cup) | green onion, finely chopped | |||
| 12 | eggs | |||
| To taste | salt and pepper | |||
| 60 g (2 oz) | swiss cheese, grated | |||

Remove crusts from sliced bread. Flatten slices with a rolling pin. Brush both sides with melted butter and press a slice into each of 12 170 mL (6 oz) ovenproof ramekins or custard cups. Set them on a cookie sheet and bake at 180° C (350° F) for 12 minutes. Divide ham, 170 g (6 oz) cheese and green onion evenly among the ramekins. Make a well in centre of each “nest” and delicately break an egg into it. Add salt and pepper and top with the other 60 g (2 oz) cheese, divided evenly among nests. Bake for 18 minutes or until eggs are done to taste. |
